What is Cocoa Mass?
Cocoa Mass is a single ingredient chocolate ground from the beans of the cacao fruit – nothing is added. Cocoa mass is the first step ingredient that can be processed further to make all types of chocolates, cocoa cake, couvertures and cocoa butter.
The single ingredient cocoa mass is often called by different names (cocoa liquor, chocolate mass etc.) in recipes, but however it is referred, it is simply the darkest, most intense form of chocolate.
Anarchy Chocolate Cocoa Mass
Anarchy Chocolate cocoa mass is made exclusively from single origin cocoa beans in our home province of Trat, Thailand. The beans are fermented, roasted, cracked and ground to make a smooth, flavoursome and dark homogeneous liquor onsite at Anarchy Farm.
Our cocoa mass is delivered in solid mass form and it’s a quality cocoa ingredient for chefs, bakers and chocolatiers to use in flavouring gelato, fillings, pralines, truffles, desserts and brownies, you name it. Since there is no added sugar and it is as clean as it gets, it is also suitable for Keto diets.
Anarchy Chocolate cocoa mass is available in bars, block and small pieces in the following quantities, sold by weight; 500g, 1KG and 5KG. For larger orders, let us know, what you want and we will accommodate your needs where possible.
