After roasting, the cocoa beans are separated into cocoa nibs (inner layer) and cocoa shells or husk (outer layer). Most of the chocolate that we eat comes from the nibs and chocolate tea comes from cocoa shells that are used to create aromatic loose leaf teas.
It is imperative not to waste chocolate, as it is a sin. So we make use of every piece of the cocoa bean. One of permaculture’s central principles is too ‘produce no waste’, as an aversion to wastefulness, what the Japanese call mottainai.
