Anarchy Chocolate - Thai Cocoa

We are pleased to announce Anarchy Chocolate is now available to purchase.

After a soft launch throughout January 2021, our bean to bar chocolate is now widely available exclusively from our online store.

Since the beginning of the new year, friends in Thailand and as far away as the UK and Australia have been the first to experience the ‘taste of freedom’.

We currently have the following chocolate products available in small batch quantities to purchase:

Taste of Freedom – The Story So Far

We discovered cocoa when we were planting out our permaculture food forest around three years ago. We were always looking for rare fruit trees to add to the staples.

We originally bought a couple of cocoa trees, a forastero and a trinitario and two fresh pods of each. We grew the beans and started to build up our stock of saplings.

Shortly after we invested in a small fruit farm that mainly consisted of mangosteen, rambutan and durian. We planed our cocoa trees along with some Chumpon I and II varieties we also grew from fresh pods that were gifted to us.

We gutted and converted our farmhouse, to not only allow another living space for us but also a huge kitchen and lab was created for the purpose of making our very own bean to bar chocolate.

Katae immersed herself into the art and science of making chocolate and through trail and error formulated the signature bars we have today.

There are many processes to making artisan chocolate and we had to invest in machines like malangers and winnowers. As we were hit with the plandemic early in 2020, it was a while until we could actually take delivery of our imports. Finally things opened up enough for us to move forward.

Katae’s sister, Karok was an accountant in Bangkok who lost her job due to covaids, so she came to live in Trat and joined in the pursuit of making the perfect chocolate bar. Together, these to women in chocolate have created a brand to be proud of. It’s never easy starting a business, especially when everyone around you is losing theirs. Never give up, never surrender!

The Future of Anarchy Chocolate

Currently we buy fermented cocoa beans from a supplier in Chiang Mai. Within the next year we will be using the ‘fruit of our labor’ and will be using our own cocoa beans grown naturally in our permaculture food forest and from Anarchy Farm.

At the time of writing, we have the second and final stage of our farmhouse renovations coming to fruition. When finished, this will allow us to ferment and dry our own cocoa beans on-site to make an exclusive tree to bar chocolate right here in Trat, Thailand.

We are excited to see what that unique chocolate will taste like and of course we will be sharing our story along the way.

Anarchy Farm Tours

Once the powers that shouldn’t be allow us our basic freedom of movement again, we will open Anarchy Farm for tours.

We will take small groups on a supervised tour of the farm and share some of the regenerative practices we employ on the farm to grow all kinds of food crops naturally, without pesticides, herbicides or hormones.

Visitors to Anarchy Farm will be able to experience a fresh and delicious farmhouse lunch and learn how small batch chocolate is made.

At the end of the day, visitors can walk through our shop and purchase our chocolate products and other items made exclusively in Trat, Thailand.
