Historically, the big industrial chocolate makers have not run sustainable business models, discarding the cocoa husks, pulp and pods.
However as small batch Thai craft chocolate makers who grow cocoa using permaculture principles, we thrown nothing away. Every component surrounding the cocoa bean is used.
The husks are made in to a delicious, fragrant and very popular Cocoa Husk Tea while the cocoa pods are used as compost, mulch or organic plant starters on Anarchy Farm. Additionally, we make cocoa juice from the pulp.
When are Cocoa Pods Ripe to Pick?
To produce quality chocolate and pure cocoa pulp juice, the cocoa pods have to picked at the right time. If the pods are picked before they are ripe or long after they are ripe the pulp and beans will be too dry to make quality cocoa or chocolate products. The beans may even start sending out shoots and you definitely don’t want them in your fermentation!
The easiest way to tell whether cocoa pods are ready to harvest is by running the edge of your thumb nail down the outside of the pod so see what colour beneath the skin is revealed.
Cocoa harvesting is done every two weeks throughout the year. One thing that set cocoa trees apart from other fruit trees is their ability to continually fruit and flower all year long, at the same time.
